The original recipe cream of tomato soup from La Madeleine contained full fat cream and ¼ pound of unsalted butter; we've replaced it with half fat cream and 1 pat (1” sq, 1/3” high) of butter - making it a lighter option. Ingredients:

2 cups (4 to 5 tomatoes) of fresh tomatoes peeled, cored and chopped;

2 cups (480 ml) unsalted tomato juice (or mixture of tomato juice and vegetable/chicken stock);

8 fresh basil leaves plus more for garnish;

4 tbsp half fat creme fraiche 1 pat (1" sq, 1/3" high) of butter;

Salt to taste;

Freshly ground black pepper.


Cooking Instruction:

  • Combine the tomatoes and juice (or juice-stock mixture) in a saucepan. Simmer over a medium-low heat for 30 min. Cool slightly, then place in food processor and whiz with 6-8 fresh basil leaves to puree.
  • Return to the saucepan and add butter and cream, stir over a low heat. Garnish with basil and serve with crusty bread.
