La Madeleine tomato basil soup is the delicious old fashioned tomato soup from the famous French restaurant “La Madeleine”. The original recipe cream of tomato soup from La Madeleine contained full fat cream and ¼ pound of unsalted butter; we replaced it with half fat cream and 1 pat (1” sq, 1/3” high) of butter - making it a lighter option. Have it as a treat and part of your balanced diet and exercise program.
2 cups (4 to 5 tomatoes) of fresh tomatoes peeled, cored and chopped
2 cups (480 mL) unsalted tomato juice (or mixture of tomato juice and vegetable/chicken stock)
8 fresh basil leaves plus more for garnish
4 tbsp half fat cream fraiche
1 pat (1" sq, 1/3" high) of butter
Salt to taste
Freshly ground black pepper
Cooking Instruction:
1. Combine tomatoes, juice (or juice-stock mixture) in a saucepan. Simmer over a medium-low heat 30 min. Cool slightly, then place in food processor and whiz with 6 -8 leaves to puree.
2. Return to saucepan and add butter and cream, stir over a low heat. Garnish with basil leaves and serve with crusty bread.
