Warm Radish Salad Recipe

This warm radish salad recipe is one of my favorite healthy salad recipes not only because I like its taste and the fact that it is very colorful, but also because it is very easy and quick to prepare and takes just 10 min from start to finish. This recipe is low in carbs and suitable for a low carbohydrate diet with just 3.7g of net carbs.

Salad Ingredients:

1 small yellow bell pepper, sliced;

2 garlic cloves, chopped;

125g (4 oz.) radishes, quartered;

2 spring onions diagonally cut into 2.5cm (1”) pieces;

6 romaine lettuce leaves cut into bite-size pieces;

1 tbsp. olive oil for cooking.

Salad Dressing Ingredients:

2 tsp. olive oil;

1 tsp. balsamic vinegar;

1 tsp. Dijon mustard;

1 tablet of Stevia (calorie and carbohydrate free) sweetener;

Salt and pepper to taste.

How to Make the Salad:

  • To make the dressing, mix the above 'dressing ingredients' together and leave to one side.
  • Heat the oil in a frying pan over a medium heat, then add the bell peppers and cook for 2 min stirring occasionally.
  • Add the chopped garlic and continue cooking for another minute, then add the spring onion and radishes and cook for a further 2 min. Mix in the lettuce leaves at the end and heat through.

  • Move the salad contents from the pan to a bowl, toss with the dressing and serve right away.
