Ingredients:

100g (3.5 oz.) unsalted butter;

100g (3.5 oz.) Lindt Excellence Dark Chocolate 85% Cocoa or similar;

100g (3.5 oz.) chopped almonds;

80g (2.8 oz.) ground almonds;

2 eggs;

3 tsp. baking powder;

1 tsp vanilla extract;

To your taste, add stevia or one of the other carb and calorie free sweeteners of your choice.

How to Make Chocolate Brownies

  • Preheat your oven to 160C/325F/gas mark 3.
  • Line a square 20cm baking dish with non-stick baking paper.
  • Heat the butter and chocolate together in a bowl set over a pan of boiling water until fully melted. When the mixture cools down in 15 -20 min add eggs and vanilla extract and stir until smooth.

  • Add the ground and chopped almonds, baking powder and the sweetener of your choice. Taste it when adding sweetener, if you use pure concentrated stevia normally 1 tsp. should be enough. Note that the strength varies in the different types of stevia, also baking will slightly reduce the level of sweetness. So, it is very important to taste and then add a bit more.
  • Pour the brownie mixture into the baking dish and bake until it has risen, is set and is a bit gooey in the middle (approx. 15 min).
  •  Allow to cool and cut into 9 pieces.
