Baked Chicken Breast Recipe

This baked chicken breast recipe is one of my favourite quick and easy chicken recipes. It will take about an hour to prepare, but trust me it’s all worth it! You will have yummy steaming hot chicken full of simple flavours for your lunch or even dinner. It’s also good for a special occasion. This oven baked chicken recipe contains 410 kcal per serving, suitable for a low carbohydrate diet (5g net carbs).

Ingredients:

2 boneless chicken breasts with skin;

60g (2 oz.) feta cheese, crumbled;

2 lemons, sliced thinly;

4 garlic cloves, peeled;

1 tbsp. olive oil;

1 tbsp. fresh lemon juice;

½ tbsp. fresh mint leaves, finely chopped;

½ tbsp. fresh tarragon, finely chopped;

5 pitted kalamata olives, sliced;

Salt and black pepper.

To serve: a few green salad leaves.


How to make the Baked Chicken Breast Recipe:

  1. Preheat oven to 180C/350F/gas mark 4.
  2. In the baking dish, arrange the lemon slices at the bottom of the dish and put the baking dish to one side.
  3. Mix the mint and tarragon in a bowl and set it aside.
  4. Place the chicken in the baking dish over the lemon slices, then loosen up the skin on the chicken breast with your fingers, press 2 garlic cloves through a garlic press and rub the garlic under the skin of the chicken breast, repeat with any remaining chicken and garlic. Dribble the olive oil and lemon juice over the chicken. Season with salt and pepper.
  5. Sprinkle the mint and tarragon as well as olives on the chicken.
  6. Put the baking dish in the oven on the middle shelf and bake for 45 min.
  7. Add the crumbled feta cheese and bake for another 5 min.
  8. Serve on a warm plate with the juice and a few salad leaves.

Please note: The nutrition facts provided for the baked chicken breast recipe do not include information for the salad leaves. Adding 30g (1 oz.) of watercress, spinach and rocket salad will provide 8 calories and 0.2g of net carbs. 1 oz. of Romaine lettuce is 4 calories and 0.3g of net carbs.

Also, we cook the chicken breast with the skin, as it adds flavor, but do not recommend eating it as it is very high in saturated fat, that is why the nutrition facts are for the skinless chicken.
