These days there are numerous ways of making ice cream. It can be as simple as mixing the right amount of cream, sugar and eggs (whites and yolk) together with a flavoring.




The standard though is a minimum of 10% milk-fat, around 10% milk solids, approx 15% sweeteners, along with a tiny amount of emulsifiers and stabilizers, with the rest made up of water. Bear in mind that the manufactured ice-cream can be 50% air.

The premium ice creams contain a higher percentage of milk-fat, which whilst making the ice-cream taste more delicious, adds a lot more calories.

Ice-cream isn't difficult to make at home, and a low calorie recipe is essential if you are trying to lose weight.
