This warm radish salad recipe is one of my favorite healthy salad recipes not only because I like its taste and the fact that it is very colorful, but also because it is very easy and quick to prepare and takes just 10 min from start to finish. This recipe is low in carbs and suitable for a low carbohydrate diet with just 3.7g of net carbs.

1 small yellow bell pepper, sliced;
2 garlic cloves, chopped;
125g (4 oz.) radishes, quartered;
2 spring onions diagonally cut into 2.5cm (1”) pieces;
6 romaine lettuce leaves cut into bite-size pieces;
1 tbsp. olive oil for cooking.
2 tsp. olive oil;
1 tsp. balsamic vinegar;
1 tsp. Dijon mustard;
1 tablet of Stevia (calorie and carbohydrate free) sweetener;
Salt and pepper to taste.
